If you haven’t heard of this let me be your guide into the wonderful world of Overnight Oats! It’s simple, uncooked oatmeal made by soaking oats in your desired choice of milk. It actually works and tastes great! I usually like to make it the night before I know I have a busy day ahead. It was my go-to breakfast choice last month when I was taking my course in Medical Nutrition Therapy. I never had time to make breakfast (or sleep really) so it was great to just grab this from the fridge and go. If you’re used to having busy mornings and skipping breakfast, this may be the key to a healthier start to your day. Your body and belly will love you for it!
It took a few tries but I was finally able to get this overnight oat thing down. The trick to making it is in the type of oats you use and the amount of milk. I’ll be posting another overnight oat recipe in the next few days so make sure to check in!
Toasted Coconut Banana Overnight Oats
(Makes 1 serving)
- 3 oz. rolled oats
- 1 oz. steel cut oats
- ¾ c. original coconut milk (almond milk or regular 1% milk)
- 1 large banana (mashed)
- 2-3 tbsp. shredded coconut to top
- Chopped walnuts or other nut (optional)
Method: In a medium sized bowl stir together oats, coconut milk, and mashed banana. Toast shredded coconut and use as topping as well as chopped walnuts (if desired). These toppings give oatmeal texture and added nutrients. If you’re planning to take this with you in the morning (like I usually do) place oatmeal in small mason jars. Cover with lids and leave in the fridge overnight for the next morning….and don’t forget your spoon!
