Cocoa Banana Loaf (Refined Sugar-Free)

After a week filled with long nights of studying and 11 pm coffees I decided to treat myself to dessert. Something satisfying but yet wholesome and some what nutritious. Yes contrary to popular belief those things can exist in a dessert! This Whole Wheat Cocoa Banana Bread is exactly that. Absolutely no refined sugars or grains, and sweetened with the naturally occurring fructose in banana’s. It’s the perfect way to end the work week.

Keep in mind, this is not your typical dessert, this is an honest Banana loaf. Meaning, it was not intended to taste like a muffin/cake. Which hence lies the (healthy) beauty in it. It’s great with a tablespoon of light butter or some fruity Raspberry compote. Ingredients:

  • 4 ripe bananas (mashed)
  • 1 ½ c. whole wheat flour
  • 2 eggs
  • ¼ c. canola oil
  • 1 tsp. vanilla extract
  • 1 tablespoon cocoa powder *non-sugar (to make it chocolate-ier add 2-3 tablespoons)

Preheat oven to 370o F. Mix all ingredients into a medium bowl until completely combined. Bake for 20-25 minutes (until the center is fully cooked). Decorate and style by topping with nuts (I enjoyed almonds but walnuts and pecans would be great as well). Be creative & Enjoy!
