Autumn Oatmeal

So happy to be back in the kitchen and the blog! After many years of projects, papers, and exams I have finally arrived at the end of it all. Had my last class this week and now I’m getting ready for my dietetic supervised practice in January!

After all the hustle and bustle of the week I took time for a relaxing breakfast this morning with the oatmeal you see here. I’m calling it a Spiced Autumn Oatmeal. Its warm cinnamon taste, in-season pears and apples made my morning!

The best thing about this recipe is how simple it is to make. Not to mention all the natural and wholesome ingredients needed to create this healthy autumn breakfast dish. Don’t let the season pass by without trying this recipe! Here’s what you’ll need:

Sautéed Apples and Pears

  • ½ sliced red gala apple
  • ½ sliced granny smith apple
  • ½ sliced Bosc pear
  • ½ lemon (juiced)
  • ½ teaspoon cinnamon
  • 1 teaspoon brown sugar or maple syrup

Oatmeal

  • 3/4 c. rolled oats
  • ½ tsp. cinnamon
  • ¼ tsp nutmeg
  • 1 ½ c. skim milk or coconut milk
  • 2 tbsp. maple syrup

Mix oatmeal ingredients (oats, cinnamon, nutmeg, milk) in a small saucepan, set heat to medium high. Once bubbling, lower heat to low and cover with lid. While the oatmeal continues to cook, add sliced apples and pears into another sauce pan, with the lemon juice, cinnamon, and brown sugar. Set heat to medium and allow mixture to simmer, cover with lid for 2 minutes. Oatmeal should be done at this point, remove from heat, add maple syrup, and stir. Uncover apple mixture, lower heat and stir for another minute. After this you should be ready to add the oatmeal to a bowl and top with zested cinnamon apples and pears!

*Tip: Sometimes I add an additional splash of milk to the oatmeal when I serve it. It all depends on your own preference. My husband loves his oatmeal to be dry while I’d rather have a bit more liquid. What’s your favorite oatmeal recipe?
