Funny story about how I came up with this idea for a recipe. About 2 months ago my husband and I traveled to New York City to visit some of our closest friends who had recently moved for missionary work. While on said trip we stopped for brunch at this small cozy cafe called The Blue Dog Kitchen Bar. If ever in NYC I highly recommend it for breakfast and brunch! Seating is limited but the Crunchy French Toast and coffee is well worth the wait. We all ordered the Raspberry White Mocha Latte, it was creamy, and the touch of raspberry was just divine! So here I am two months later still thinking about that coffee. Instead of waiting for our next visit to the Big Apple I decided to take matters into my own hands, and try making a healthier but still delightful version of the coffee beverage we experienced.

Raspberry Syrup

  • 6 ounces of raspberries
  • ½ c. water

Using a small saucepan add raspberries and bring to medium heat. Allow to cook for 15 minutes, mash raspberries and the water will slowly become a syrup. Using a small strainer, strain the raspberry mixture and leave the syrup (without the seeds) for use. Tip: the remaining raspberry leftover can be reused with ¼ c. water to make more raspberry syrup. The raspberry syrup can be put in a small mason jar and kept in the refrigerator for 5 to 6 days.

Latte Ingredients

  • 1 shot of espresso (1 ounce)
  • 2/3 c. 1% milk, skim milk, or coconut milk
  • ½ tsp. all natural cocoa (unsweetened)
  • 2 tablespoons of raspberry syrup (follow above instructions on how to make)
  • (1 tsp sugar is optional = 4 grams of sugar)

Add one ounce of espresso to glass, ½ tsp cocoa, optional 1 tsp. sugar, and raspberry syrup. Mix with small spoon or whisk. Add steamed and frothed choice of milk and latte is complete! Note: Additionally topping with whipped cream is optional as well as a fun holiday straw! Enjoy!
