Crispy Chickpea-Sprout [Healthy Curating]


Sometimes serving crackers, grapes, and cheese just doesn’t cut it. Looking to shake things up as a hostess? This Crispy Chickpea-Brussels Sprout combo will forever change how you look at serving appetizers. Not to mention it’s got the healthy snack stamp of approval!

Want a full lunch instead? Making it into a sandwich! This combination makes a surprisingly filling and tasty vegetarian dish. Don’t knock until you try it with a whole grain baguette and Spanish Manchego cheese. Here’s how you get started:

  • 2 cans of Chickpeas (garbanzo beans)
  • ½ tbsp. olive oil
  • ¼ tsp Salt (or to taste)
  • Pepper (to taste)
  • Cayenne Paper (to taste)

Preheat oven to 450 degrees F. Wash Chickpeas before use to get rid of additional sodium from the can. Wash & drain twice. Pat dry (they tend to roast better). In a medium sized bowl, toss chickpeas with olive oil, and add favorite seasonings. My go-to spices are simple: pepper, salt, and for a spicy kick cayenne pepper. Spread on baking sheet and bake for 30-35 minutes until they become brown and crunchy.

  • 2 cups of Brussel Sprouts
  • ½ tbsp. lemon juice
  • ½ tbsp. olive oil
  • ¼ salt (or to taste)
  • ¼ pepper (or to taste)

Wash vegetables thoroughly and drain. Cut each in half or quarters depending on the size of the sprout. In a skillet, add olive oil and heat to medium-high. Add Brussels sprouts and seasoning. Cook for 8 minutes, making sure to stir frequently and add ¼ c. water. Allow them to caramelize for another 2-3 minutes. Taste a sample and make sure you approve of the consistency. Serve & it’s ready to eat!


Serving Options:

Serve As A Sandwich:

You’ll need whole grain bread (baguettes work the best), manchego cheese (other cheeses will work as well but I love the combination with this one in particular), sautéed Brussel sprouts, and roasted chickpeas. To prepare use either a sandwich press if you have one, or a simple pan/skillet with a turning spatula.

Add all ingredients to the sandwich. The cheese should be placed next to the bread; this will ensure the rest of the ingredients will stick to it when it melts). Heat a skillet over medium-high heat. Lightly spray olive oil on the pan to prevent any sticking. Cook sandwich on both sides for a few minutes until golden brown. Cut in half for presentation and enjoy!

Serve In A Spread With Other Appetizers:

Toss Chick Peas and Brussels sprouts together in your best entertaining bowls + serving spoon. Serve a warmed baguette on a cutting board, making sure to slice into 1 inch pieces ahead of time. Add slices of Mangecho, Cheddar, Gouda (or any other) on cutting board as well. *Tip: Adding some grapes/fruits and a bottle of wine tops it off perfectly. After that it’s up to you as the host to introduce the dish to your guests! Enjoy!
