Some people think it takes time to eat healthy, and for some recipes that many be true. But that’s not the case when it comes to this salad. It took me a total of 10 minutes to throw it all together. When the most time consuming aspect of a meal is slicing an apple you’ve got no excuse not to try it out! 🙂
That being said, one key concept to try to keep in mind when trying to eat healthy is to be honest with yourself. Don’t sit around eating kale all day if you hate it, make eating healthy enjoyable and something you can be proud of! For example, you will never catch me eating celery (yuck), I can’t stand it and I wouldn’t be doing myself any favors if I forced myself to eat it. Especially when there are so many other vegetables I do love eating! If you don’t like kale for instance, add spinach, or romaine lettuce. Or both! Every person is different, so there can never be one right way to loss weight or eat healthy.
If you feel like you’re unsure about goat cheese, the pairing of ingredients will really help turn your opinion. The sweetness from the apples, and nutty crunch from the walnuts really complements the sharp flavor of the cheese. Give it a try!
My usual go-to salad is a simple tomato, cucumber, and romaine lettuce combination topped with cilantro, olive oil, and lemon juice. Easy Apple, Walnut, Goat Cheese Salad
- 1 medium Apple
- 1/2 Lemon
- Goat Cheese
- 3-4 c. Spring Mix
- Balsamic Vinaigrette
Directions: Thinly Slice Apples and chop walnuts. Squeeze the lemon over apples (this will assure the apples stay fresh). Add greens to your chosen salad bowl, then apples and walnuts. Mix well. Make sure to sprinkle cheese over your salad once served, this prevents the cheese from clumping from mixing. Add dressing and enjoy your healthy meal!
